The iTouch can be used to make Podcasts of the student reading a book, which they can listen to later as they follow along. For students with fine motor concerns, the iTouch and iPad is a great platform for them to practice handwriting. There is less resistance than traditional paper and pencil tasks and it provides immediate feedback.
